Lisa's Cucumber Salad

Ingredients

  • 4 medium sized cucumbers, peeled and sliced as thin as possible
  • 1 carrot, peeled and sliced as thin as possible
  • 1/4 cup white onions, sliced thinly
  • 3 teaspoons salt
  • 1/4 cup boiling water
  • 1/4 cup sugar
  • 2/3 cup white vinegar
  • 1 tablespoon peppercorns

Directions

  1. Layer the cucumbers, carrots, and onion in an airtight container. Combine all other ingredients and pour over vegetables. Cover and refrigerate at least 2 hours or overnight.
