This is always a favorite at the Home Idea Factory - feel free to substitute any vegetable your family enjoys or are in season. This is a great low calorie, low cost meal.
4 cups water
40 oz. Rotel Diced Tomatoes and Green Chilies
4 cups new potatoes, diced
3 cups celery, sliced
3 cups carrots peeled and sliced
1 cup zucchini, sliced
1 cup Summer squash, sliced
1 cup corn kernels
1 cup peas
1 avocado, cubed
1/4 cup Colby Jack cheese grated
Pour water into a slow cooker and turn heat to high. Add potatoes, carrots and celery and cook 2 hours or until tender. Reduce heat to low and add corn, peas, zucchini and squash. Cook another hour then add the Rotel diced tomatoes. Add salt and pepper to taste, serve topped with avocado, cilantro and cheese.
