Lazy Day Risotto
1 1/2 cups aborio rice
5 1/2 cups vegetable stock
1 cup shredded parmesan cheese
1/2 cup pinot Grigio wine
3 tablespoons butter cut into small pieces
2 cups vegetables
2 teaspoons salt
1 teaspoon pepper
Preheat oven to 350 degrees. Place 4 1/2 cups of the stock into an enameled cast iron 6 qt dutch oven. Add rice, stir, cover with lid and place in oven for
40 minutes. Check and make sure that liquids have been absorbed by the rice, and if so remove from oven.
Add the rest of the ingredients except for the vegetables to the mixture and stir until combines and creamy - approximately 2 minutes. Stir in vegetables and serve.
