Caramel Flan de Leche
Steamer basket or trivet bottom
Medium sized heavy bottomed pan
Silicone heat resistant spatula
8 custard cups
aluminum foil and plastic wrap
Caramel: 1 cup Sugar
14 oz Sweetened Condensed Milk
12 oz. Evaporated Milk
1 Tablespoon Vanilla Extract
1/2 teaspoon Nutmeg
Place 1 cup sugar in a heavy bottomed pan and place over medium heat. Let melt until mixture becomes an amber color - Do NOT stir- if necessary swirl pan to cook evenly. When ready take off of heat and pour a small amount into the bottom of each custard cup - just enough to coat bottom. Place cups aside and prepare flan mixture.
To prepare flan, mix remaining ingredients together and press through sieve.
Pour into Caramel lined custard cups and cover with foil.
Place 1 1/2 cups of water into bottom of Instant Pot®, place steamer basket pot and place custard cups on top of that. Using the manual setting, set for 5 minutes, and when finished cooking, use the natural pressure release to finish and open.
Take cups out of pot and let cool. Remove foil and cover with plastic wrap. place in refrigerator and cool for at least 3 hours or overnight.
When ready to serve remove plastic wrap and place bottom of cups in a bowl of very hot water for a few minutes. The using a knife loosen up the edges of teh flan at the top, then invert onto a serving plate.
