Everything But The Kitchen Sink Breakfast Bites

One of the things I enjoy the most about having company over at the Home Idea Factory is having the opportunity to cook for everyone and to try out new recipes.

It seems like lately there are more people with dietary restrictions so these bites are an easy way to let people design their own dishes without a lot of extra cooking and prep time. You can literally put anything into them you like, and each person can customize it with their favorite ingredients.

EVERYTHING BUT THE KITCHEN SINK BREAKFAST BITES

INGREDIENTS:

9 large or extra large eggs

1/3 cup milk

1/4 teaspoon salt

1/4 teaspoon coarse ground black pepper

olive oil cooking spray

DIRECTIONS:

Preheat oven to 375 degrees. Use cooking spray to coat the inside of the muffin tin.

Prepare your favorite ingredients: I like ham, bell peppers, and onions but you can use whatever you choose. Dice vegetables and saute until they are cooked how you like them. Cook meats and chop them into small pieces. Place ingredients into the bottom of the muffin tins.

Whisk together eggs, milk, and spices and pour over fillings until about 2/3 full. Top with your favorite cheeses and herbs, and bake approx. 12 minutes or until the tops are golden brown.

Remove from oven and carefully remove the bites from the muffin tins - plate and enjoy!

I also like to make these ahead of time and keep them in the refrigerator for a quick healthy breakfast on busy mornings.
