Fresh Corn Fritters

A few years ago I discovered the Avon Corn Festival that is put on every year by the Avon NY Rotary Club. It was so much fun, I go back every chance I have.

One of the highlights (besides the kid’s corn-on-the-cob eating contest) is the corn fritters that they make and sell. They have a huge flat top that they make them on all day long, and they are one of the best things I've ever eaten. I've been working ever since on trying to duplicate their recipe.

I finally have something that is close, and it's best with just picked corn and NY maple syrup on top, but frozen corn also works well.

INGREDIENTS

3 ears of fresh corn (or 2 cups if using frozen)
2/3 cup milk
2 eggs
1 Tablespoon melted butter
1 teaspoon baking powder
1 cup flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

DIRECTIONS

Cut corn kernels off of ears of corn.
In a bowl mix together all ingredients, then add corn kernels.
Heat the griddle to medium heat and melt additional butter in the area you will cook on.
Spoon mixture onto griddle - cook until just starting to brown on edges.
Flip and cook another side until golden brown.
Plate and serve with maple syrup or powdered sugar.
