Do You Sous Vide?

Do you sous vide? When we heard about Signature Kitchen Suite offers a dual-fuel Pro Range that you could do sous vide cooking with we were skeptical. There has been a lot of chatter about this form of cooking lately, but we weren’t sure why this would be a better way to cook. But after we tried cooking bacon with this method, we are believers.

I haven’t done a cooking demo for years, but when Signature Kitchen Suite asked me to do a holiday demo at Capital Distributing I thought it was a great reason to test out some new recipes I have been working on, as well as to share some of the beautiful Boisset Collection bubbles that I am proud to be an ambassador for. No one could believe that we used sous vide for the Dulce de Leche, but the big fan favorite was the Candied Bacon.

When we say a two-year-old could make this, we aren’t kidding. It is so simple, even if you aren’t a good cook or you are a lazy cook like we are you can make this bacon and it will be perfect every time. That’s the beauty of the sous vide process. You are cooking in a water bath that keeps your food at a precise temperature, and since your food is on a sealed bag it keeps all of that goodness around what you are cooking - no nutrients or flavor escape.

Cooking bacon using this method seemed like a stretch. There is no better way to cook steaks, vegetables and other things that you love, but I think this is the only way I will ever cook bacon again. I hate the greasy mess that bacon usually makes, and by cooking it in a bag you can do a large amount at one time, and finish it off whenever you are ready for it. Clean up was so easy, and thick-cut bacon is usually too tough for me, but this was as tender and as flavorful as you can imagine - especially since we made candied bacon with it. The bacon is put in the sous vide bath either right in the pouch that you buy it in at the store (be sure to buy it without the paper insert that some have) and we found that thick-cut works better. We are sharing the “recipe” here - it’s almost too easy to call a recipe!

Another great thing about cooking with sous vide is that you turn it on and walk away. No stirring, turning or adjusting the temperature - The Signature Kitchen Suite range keeps it at the precise temperature, and even if you forget to take it out at the exact time that is recommended, we have found that an extra 30 minutes or more won’t make a difference!

It’s holiday cooking and entertainment time, and being able to cook a few pounds of bacon at a time overnight without taking up valuable oven or burner space was a lifesaver. Candied bacon is wonderful on its own - we cut the strips into bite-sized pieces for easy party nibbling. It’s also great to put on top of salads or to top sweet potatoes with. We can’t wait to try out some more ideas and share them with our readers!
