Blender Banana Bread

Sheltering in Place and the crazy lines at the grocery store have me rethinking what I have in my pantry. Today I found some bananas in there that were almost past their prime, so I thought I’d try making some banana bread instead of throwing them away.

In 1978 General Electric put out “Cooking With a Food Processor.” There are some great recipes in it, and I still have my copy. Today I use my Ninja blender almost daily to cook with. I updated the original recipe using some of my favorite ingredients, like dark brown sugar. It adds lots of flavor and will make this bread one of your favorites.

By mixing everything together in your blender it keeps clean up to a minimum. Be sure to just pulse when you mix the ingredients together - if you over process, you will have a coarse, tough bread. by just pulsing and keeping the ingredients a little bit chunky this will melt in your mouth.

INGREDIENTS

1/2 cup butter cut into teaspoon-sized slices
1/2 cup dark brown sugar
1/2 cup granulated sugar
2 large eggs
2 ripe bananas
1/4 cup milk
2 teaspoons lemon juice
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla

1/2 cup chopped walnuts (optional)

DIRECTIONS

Preheat oven to 350 degrees.

Put milk, baking soda and lemon juice in a cup and set aside.
In your blender add sugars and butter together, pulse until a coarse blended consistency.
Add the rest of the ingredients including the milk mixture.
Pulse until evenly blended -mixture should still be a little bit chunky. Pour into greased and floured loaf pan and place into preheated oven for 55 minutes, or until center feels as firm as the outside.

Let cool if you can resist taking a bite before then and enjoy! It can be refrigerated and enjoyed later as well.

Lifestylist Tip: Grill or toast a slice of banana bread and top with some really good vanilla ice cream and a little caramel sauce. A delicious, easy dessert!
