Chef Nick's Sous Vide Limoncello

Ingredients:

1 Cup Vodka
3 lemons, peel, and juice
2 oz water
1/2 T sugar
1 T honey - preferably local

Directions:

Set the sous vide water bath to 140 degrees.

  1. Carefully peel the lemons with a vegetable peeler making sure to get none or very little of the white pith. Juice the lemons, then strain the juice and reserve for later.

  2. Combine the vodka, water, lemon peels, sugar, and honey in a pouch. Seal and place in the sous vide water bath for two-three hours. Shake the bag after being in the bath for an hour to ensure the sugar is totally dissolved.

  3. Remove from the water bath after two to three hours, and let cool to room temperature.

  4. Strain the mixture into a jar or bottle, and place in the freezer until ready to serve.

  5. Serve by itself as an aperitif, or add ice and sparkling water or champagne to create a Limoncello Spritzer.
