Vegetable Soup

This is always a favorite at the Home Idea Factory  - feel free to substitute any vegetable your family enjoys or is in season. This is a great low-calorie, low-cost meal.

INGREDIENTS

4 cups water

40 oz. Rotel Diced Tomatoes and Green Chilies

4 cups new potatoes, diced

3 cups celery, sliced

3 cups carrots peeled and sliced

1 cup zucchini, sliced

1 cup Summer squash, sliced

1 cup corn kernels

1 cup peas

1 avocado, cubed

1/4 cup Colby Jack cheese grated

DIRECTIONS

Pour water into a slow cooker and turn the heat to high. Add potatoes, carrots, and celery and cook for 2 hours or until tender. Reduce heat to low and add corn, peas, zucchini, and squash. Cook another hour then add the Rotel diced tomatoes. Add salt and pepper to taste, and serve topped with avocado, cilantro, and cheese.
